How to Make Your Own Vegetable Stock at Home (Easy & Delicious)

Vegetable scraps are full of flavour and nutrients. This method is incredibly flexible, meaning you can use a wide variety of ingredients, easily tweaking the recipe to what is available in your home! Check out our easy recipe to create your own vegetable stock at home.

Vegetable Scraps You Can Use

  • Garlic peels 

  • Celery, both stalks & greens

  • Onions, peels and ends

  • Carrots, peels, and green top

  • Mushroom stems

  • Fresh herb leftovers including rosemary, sage, basil, thyme, parsley, oregano and bay leaves

  • Potato skins

  • Bruised tomatoes & trimmed ends

Steps to Creating Your Homemade Vegetable Broth

  • Collect vegetable scraps and store the saved goodies in a sealed freezer bag

  • Start with a sauté by grabbing your stock pot and adding any fresh ingredients you may be using and add a splash of olive oil. Season it with a pinch of salt and pepper. Cook over medium-high heat for 5-10 minutes to soften. Don't add any frozen scraps just yet.

  • Add all your saved frozen kitchen scraps to your pot. Next, add enough water to fully cover veggies. Bring ingredients to a boil, then reduce to a simmer. Partially cover with a lid and allow your vegetable broth to simmer for 45 minutes to an hour. Don't forget, the longer it simmers the more flavour is extracted from the scraps.

  • Now it's time to strain the solids. Carefully pour your homemade vegetable broth contents through a strainer. Put a large container or pot under the strainer to catch the broth. Use a wooden spoon to press down on the veggies in the strainer, extracting as much liquid as possible! After repurposing the vegetable scraps, make sure to compost them.
